This handcrafted mezcal is made from wild Salmiana agave grown in the calcareous soils of the Central Mexican Plateau in San Luis Potosí. Known as the “Green Giant,” the Salmiana agave matures over eight years under the region’s semi-arid climate, developing vibrant vegetal character and refreshing citrus complexity. Unlike traditional smoky mezcal production, the agave piñas are gently vapor-cooked in above-ground ovens, preserving the purity and freshness of the agave while creating a remarkably clean and expressive spirit.
